Saffron is ... is the dried "stigma" or threads of the flower of the Crocus sativus plant.
It is a bulbous perennial plant that belongs to the family of Iridaceae, in the genus, Crocus, and known botanically as Crocus sativus.
The Crocus sativus plant grows to about 15-20cm in height and bears lavender colored flowers during each season which lasts from October until November. Each flower features perianth consisting of a stalk, known as “style,” connecting to three “stigmas” or threads to the rest of the plant. These orange-yellow colored stigmas along with the "style" constitute "saffron" a prized condiment spice.
Saffron is a plant. The dried stigmas (thread-like parts of the flower) are used to make saffron spice.
It can take 75,000 saffron blossoms to produce a single pound of saffron spice.
Saffron is largely cultivated and harvested by hand. Due to the amount of labor involved in harvesting, saffron is considered one of the world's most expensive spices. The stigmas are also used to make medicine.
Their flower pistils compose several essential volatile oils, but the most important of them all is safranal which gives saffron its pleasant flavor. Other volatile oils in saffron are cineole, phenethenol, pinene, borneol, geraniol, limonene, p-cymene, linalool, terpinen-4-oil, etc.

It's a (cooking) ingredient used in Sweden, England, the U.S., and France, not to mention the countries where, collectively, around 50 tons are grown every year: Azerbaijan, China, Egypt, France, Greece, India, Israel, Iran, Italy, Mexico, Morocco, Spain, and Turkey. The commercial cost is about 50 million dollars, so it's a good thing saffron can remain fresh in an airtight container for several years.
Good saffron crop production demands cold, dry climate with well-drained rich fertile soil and irrigation facilities or sufficient amount of rainfall. The flowers harvested during the early-morning hours and soon their stigma separated, allowed to dry, and packed for marketing.
Why so expensive, you may ask?
Because the cultivation and harvest is still performed as it was since ancient times: by hand.
Elderly village women are usually set on this task of removing the saffron "threads."
It takes 4,500 crocus flowers to make up one ounce of saffron spice.
Of course, the high cost is a magnet for pretenders, who hawk saffron wannabes derived from substances other than the crocus flower.
Indian safflower or compositae is one of them, a paler red version sometimes masquerading as the real thing.
It's been suggested that buying saffron at your local supermarket might not yield the freshest product.
A better option might be obtaining it from an ethnic specialty grocery store.
But make sure it's actually saffron you purchase, because another affectation is "meadow saffron" (Colchicum autumnale), which, although used as a medicine, can be quite toxic, so it should be strictly avoided.

Selection and storage

Fresh spice should feature bright crimson-red color, and when rubbed between fingers, should release a very pleasant aroma and stain golden-yellow. Some research shows that taking a specific saffron product (IMPIRAN, Iran) by mouth for 22 weeks might improve symptoms of Alzheimer’s disease about as well as the prescription drug donepezil (Aricept).
Depression.
Taking specific saffron extracts (Novin Zaferan Co, Iran) by mouth seems to improve symptoms of major depression after 6-8 weeks of treatment. Some studies suggest that saffron might be as effective as taking a low-dose prescription antidepressant such as fluoxetine or imipramine.
Menstrual discomfort.
Some research shows the taking a specific product containing saffron, anise, and celery seed (SCA, Gol Daro Herbal Medicine Laboratory) reduces pain during the menstrual cycle.
Premenstrual syndrome (PMS).
Some research shows that taking a specific saffron extract (Department of Cultivation and Development of Institute of Medicinal Plants, Iran) improves symptoms of PMS after two menstrual cycles.
Protects against cancer:
Saffron contains a dark orange, water soluble carotene called crocin, which is responsible for much of saffron's golden color. Crocin has been found to trigger apoptosis [ programmed cell death] in a number of different types of human cancer cells, leukemia, ovarian carcinoma, colon adenocarcinoma, and soft tissue sarcoma. Researchers in Mexico who have been studying saffron extract have discovered that saffron and its active components display an ability to inhibit human malignant cells. Not only does the spice inhibit cells that have become cancerous, but it has no such effect on normal cells and actually stimulates their formation and that of lymphocytes [immune cells that help destroy cancer cells].
1. Boosts Cardiovascular Health
Recent studies have shown great promise of saffron constituents in the promotion of a healthy cardiovascular system.
Heat shock proteins (HSPs) 27, 60 and 70 in particular were significantly linked to metabolic syndrome and atherosclerosis so researchers wanted to investigate the effect of this herb on antibody titers to HSP in patients with metabolic syndrome.
The levels of heat shock proteins 27, 60, 65 and 70 were measured in a study published in the Journal of Complementary & Integrative Medicine during supplementation, with 105 participants diagnosed with metabolic syndrome. The participants were randomly divided into two groups and were given either 100 milligrams a day of a placebo or saffron. After three months, the antibodies to heat shock proteins 27 and 70 were reduced greatly in the saffron group.
2. Treats Erectile Dysfunction
Erectile dysfunction (ED) affects more than 150 million males throughout the world.
In traditional medicine, saffron was used as an aphrodisiac, with the constituent crocin credited for its aphrodisiac activity.
In a pilot study to evaluate this traditional use, 20 male participants with ED were evaluated for 10 days. Each morning, the participants took a tablet containing 200 milligrams of this spice. The participants underwent the nocturnal penile tumescence test and the international index of erectile function questionnaire (IIEF-15) at the start of supplementation and at the end of 10 days.
After the 10 days of supplementation, there was a statistically significant improvement in tip tumescence and rigidity as well as base tumescence and rigidity. The ILEF-15 total scores were significantly higher in participants after supplemented with this herb. There was a positive effect on sexual function with increased duration and number of erectile events seen in men with erectile dysfunction only after taking it for 10 days. Thus, this traditional spice also potentially works as a natural remedy for impotence.
3. Possesses Potential Anticancer Effects
Cancer is considered to be the second leading cause of death in the world.
Saffron as a medicinal plant is known for its anticancer capabilities, making it a potential natural cancer treatment.
In a randomized, double-blind clinical trial published in the Avicenna Journal of Phytomedicine, the effects of saffron on response to treatment in patients suffering from liver metastasis were evaluated. Thirteen participants suffering from liver metastases were included in this study and then divided into two different groups. Both groups received chemotherapy regimen. Participants in group 1 were treated with saffron capsule (50 milligrams, twice daily) during chemotherapy periods while group 2 received a placebo.
A sum of the longest diameter was calculated and compared for all lesions in IV contrast CT scan before and after the treatment.
Out of the 13 who participated, six quit and seven continued until the end. In the group treated with saffron, two participants showed partial and complete response (50 percent) whereas in placebo group, no response was seen. Also, two deaths in the placebo and one in saffron group occurred. This research suggests that saffron might be useful in patients suffering from liver metastasis and other cancers.
4. Alleviates Symptoms of PMS
Premenstrual syndromes (PMS) are among the most common health problems reported by women, affecting 2o percent to 40 percent of women of reproductive age. Saffron is considered an excellent antispasmodic so researchers at the Tehran University of Medical Sciences’ Vali Asr Reproductive Health Research Center assessed whether it could alleviate symptoms of PMS. Women aged 20 to 45 years with regular menstrual cycles who experienced PMS symptoms for at least six months were eligible for the study. Women were randomly assigned to either group A, who receive 15 milligrams of capsule saffron twice a day in the morning and evening or group B, who received a capsule placebo twice a day for a two menstrual cycles.
The women were evaluated for PMS symptoms using a Premenstrual Daily Symptoms (PDS) questionnaire and Hamilton Depression Rating Scale (HAM-D). Results showed a significant improvement in both tests (PDS and HAM-D) for the women in the saffron group compared to their pre-treatment symptoms and also showed a significant improvement in symptoms compared to the placebo group.
5. Promotes Satiety and Weight loss
In a Malaysian study, researchers wanted to investigate the satiety property of saffron.
Women participants were given a capsule of Satiereal twice daily or an inactive placebo with no restrictions in dietary intake.
After two months, the participants using the saffron extract reported a decrease in snacking and lost more weight than the control group.
The researchers concluded that this herb can help treat obesity by curbing the appetite, promoting weight loss.
6. Treats Anxiety and Depression
Depression is a serious disorder in today’s society with estimates of lifetime prevalence as high as 21 percent of the general population in some developed countries. As a therapeutic plant, saffron was used for depression in Persian traditional medicine, and researchers wanted to assess the efficacy this herb in the treatment of mild to moderate depression in a 6-week clinical trial.
Thirty adult outpatients who met the clinical interview for depression participated in the trial.
Participants had a baseline Hamilton Rating Scale for Depression score of at least 18.
In this double-blind, single-center trial, participants were randomly assigned to receive a capsule of saffron (30 milligrams a day) in group 1 or a capsule of the antidepressant imipramine (100 milligrams per day) in group 2 for a 6-week study. Saffron at this dose was found to be effective in a similar manner to imipramine in the treatment of mild to moderate depression.
In another study published in the Journal of Complementary & Integrative Medicine, 60 adult participants with anxiety and depression were randomized to receive a 50 milligram saffron capsule or a placebo capsule twice daily for 12 weeks. The questionnaires Beck Depression Inventory (BDI) and Beck Anxiety Inventory (BAI) were used at baseline, six and 12 weeks after starting medication. 54 participants completed the trial. As a result, the supplementation of saffron had a significant effect on the BDI and BAI scores in comparison to placebo during 12 weeks.

There are two places in Kashmir that are able to be a land for saffron cultivation.
One of these two places is Pampur.
Pampore or Pampur is a historic town situated on the eastern side of river Jehlum on Srinagar-Jammu National Highway in Jammu and Kashmir. It is worldwide famous for its Saffron, so known as Saffron Town of Kashmir. The area is about 11 km from Srinagar city centre Lal Chowk. Pampur is a lush and pristine area which is outstanding place for cultivating saffron.
The saffron plant is very small and its flower is the only part which is seen above the ground.
The harvesting time of this saffron is autumn. The best environment for cultivating saffron is cool dry climate and rich soil with organic fertilizers and Kashmiri lands are famous for this rich qualities. The stigmas of Kashmiri saffron are very long and with thick head. They are dark red color. The quality of soil and suitability of climate have significant impact on size of stigmas. There are three grade of saffron that are available in Kashmir: Lachha saffron, Mongra saffron and Zarda saffron. Kashmiri saffron is well known for its exotic aroma and as a flavor in culinary preparation. Kashmiri saffron has deep dark maroonish-purple hue. While Persian saffron has about 70% of total world production, in case of quality Kashmiri saffron is the best and finest.

In addition, crocin contains flavonoids, which has been found to shrink cancerous cell lines, thereby destroying them.
Other health benefits of saffron are its use in the treatment of menstrual discomfort, asthma, atherosclerosis, depression, etc. Saffron also contains bio-chemical compounds like the lycopene, zea-xanthin, and a- and ß- carotene, all of which act as immune modulator and as such, prevent the development of cancer in the body.

For Radiant Skin:
The human skin looks dull and lifeless as a result of harsh weather, pollution on the environment and other variables it encounters on a daily basis. External application of saffron over the skin brings back the lost glow on the face of the skin.
Application:
Add 3-4 strands of saffron to 1-2 tablespoons of hot water in a little bowl.
Cover and leave for at least 30 minutes.
Before you go to bed, use your fingers to crush the strands of saffron in order to extract the saffron solution.
Add half tablespoon of honey and mix. Then use a layer of this solution over your skin.
Make sure your skin is clean and without dirt before the application.
Leave the solution on the skin for around 10-15 minutes, and then wash it off with plain water.
Never make use of soap.
For Brightening of the Skin:
Add several strands of saffron to 2 tablespoons of warm milk.
Leave for at least 30 minutes and then crush the strands very well.
Include one tablespoon of pure sandal powder to the mixture and mix to produce a smooth face mask.
Then apply this over your skin and leave it to stay up to 15 minutes or more. Wash with plain water afterwards.
For Sun Tan Removal:
Soak several strands of saffron in a tablespoon of hot water for 30-45 minutes.
On the elapse of the 30 minutes, crush up the saffron strands.
Add a small amount of fresh cream to it and mix them together.
Before going to bed and after washing your body, apply this over your skin and let it stay till dawn.
When you wake up in the morning, wash off with mild face wash. If your skin is oily, then use honey in place of cream.
For Skin Toning:

Soak 2-3 strands of saffron in small water filled with roses, and then crush it to bring out the colour.
